THERE’S always one or two, or three, more at our table on Sunday evenings. I had a piece of pumpkin that needed to be used and made a quick and easy pumpkin tart for everyone. Slice the pumpkin thinly, lay it on puff party, top with fetta and pepper and bake at 200-220C, depending on your oven, until the pastry puffs around the edges and turns golden. Top with caramelised red onion and serve.
