OOOH BABY, it's cold out. That wind. That August wind. I know it's supposed to blow in spring but winter does go out kicking and screaming.

I knocked out a batch of honey oat bars to eat as my morning tea treat at work this week and polished off the last couple of pieces this morning, which means, of course, I'll have to bake more.

HONEY OAT BAR
One cup rolled oats
One cup sultanas
Half cup wholemeal SR flour
Half cup coconut
Half cup brown sugar
125g butter
One tablespoon honey

Melt the butter and honey together and pour over all dry ingredients. Mix together until all dry ingredients are moistened. This feels like it's not going to happen, but does. Press into a greased and lined lamington tin and bake in a moderate oven for 15-20mins, or until golden brown. Remove  from the oven and allow to cool slightly. While still warm, gently cut your slice portions and then leave it to sit in the tin until completely cold. It'll crumble if you try to eat it warm.
