THERE’S always one or two, or three, more at our table on Sunday evenings. I had a piece of pumpkin that needed to be used and made a quick and easy pumpkin tart for everyone. Slice the pumpkin thinly, lay it on puff party, top with fetta and pepper and bake at 200-220C, depending on your oven, until the pastry puffs around the edges and turns golden. Top with caramelised red onion and serve.

  5. Yum yum. Reminds me of the quick onion tart I made, by cooking onions in white wine and juniper berries and then plonking them in shortcrust pastry, and sprinkling goat cheese upon the finished result... so rich like a dessert!
