THIS Thai-style chicken soup is an easy mid-week meal that packs flavour. It's so easy you can make it in less time than it takes to order Thai takeaway, and it's easily as good, if not better.

This is a soup you can enjoy in summer. It's made in about 15 minutes of prep time and from a handful of ingredients, most of which are usually found in my pantry.

INGREDIENTS

2 tablespoons peanut oil, or any vegetable oil
3cm tuber of ginger, grated
3cm tuber of turmeric, grated
2 long red chillies, de-seeded and finely sliced
2 cloves of garlic, crushed
6 spring onions, sliced
750g chicken mince
1.5 cups of chicken stock
2 tablespoons fish sauce
2 tablespoons lime juice
1 heaped tablespoon brown sugar

400ml coconut cream

WHAT TO DO

I use a wok and cook this quickly, but a large frying pan or good heavy based saucepan that you can get hot and will hold the ingredients, and liquid, will work just as well.

In a hot pan, or wok, pour the oil. When hot add the garlic, turmeric, ginger and chillies and fry off for a minute. Add the chicken mince and onion, stirring over the heat until combined and the chicken is cooked through. Add the stock, coconut cream, fish sauce, lime and sugar. Bring to a quick boil and then reduce the heat to cook for a further five minutes. 

Ladle into bowls and gobble down with a beer - Thai beer, obviously, by your side.
