April 17, 2008SIGH. The hardest thing about all midweek meals is deciding what to cook. Chicken, thawed and in the fridge. Hmm, what to do with it? A plentiful supply of basil in the garden, a quick check on the pantry’s store of pasta and a scrabble at the back of the fridge to find some cream – sour cream, but it would do – and we had dinner. Cut onions and garlic, sauté in butter, brown cubed chicken and stir through the homemade basil pesto, a splash of the sour cream and pasta and hey presto, or hey pesto, a midweek meal.
