SUNDAYS are the day we do a big cook up of lunches for the coming week. This week we’re eating rice salad and fruit and bran muffins. Cooking lunches for the week saves us time in the mornings and ensures we’re choosing healthy snacks rather than spending money buying lunches that are usually not as healthy as what we can prepare at home. The Girl Guide unit I lead walked dogs at the RSCPA on Sunday and when I came home the cook up was almost done. What a treat to walk into a house that smelled of baking and to see the rice salad cooling in a big fridge-friendly container.

  2. Thanks Sherrin. They are yum. Pie apple and date is the fruit part and we use oat bran rather than wheat bran. There's also almonds. I had a pic of the process because I walked in mid batch. One batch was in the oven and one on the go. At 6am this morning the picture just didn't want to stick. I'll try and edit the post to add it later.

  3. I just love this idea...I'm hoping to be more organized this school year with preparing lunches at least the night before. Seems like we're always scrambling to throw something together in the morning.
